Quiche can be an economical way to make a nutritious dinner and with a broccoli quiche recipe in hand, dinner is just minutes away.

Everybody Likes a French Quiche

Because quiche is tasty, easy to make, and uses inexpensive ingredients, this dinner is making a comeback. All you need is a piecrust, some eggs, milk or cream, and whatever filling you want to use.

As far as the piecrust goes, you can make your own if you are so inclined, but a frozen piecrust will work perfectly. If you happen to have a piecrust lounging in your freezer, you probably have everything else you need for your broccoli quiche recipe.

When getting ready to make your broccoli quiche recipe, you will be considering your broccoli options. You can use either frozen broccoli or fresh. To make one quiche, you will need 10 ounces of broccoli, which is a cup and a half of chopped broccoli. If you are using frozen broccoli, you can quick thaw it under hot running water. This will both thaw the broccoli and effectively blanch it.

On the other hand, if you are using fresh broccoli, you will want to blanch and shock it before adding it to the quiche. Blanching and shocking is much easier than it sounds. In fact, if you can boil water you are halfway there.

Blanching Broccoli

Ingredients

  • 1 pound of fresh broccoli
  • Salt
  • A large pot of water
  • A large bowl of ice water

Instructions

  1. Trim the bottom inch of the stems off of the broccoli.
  2. Then, trim the stems off of the heads of the broccoli.
  3. Using a vegetable peeler, peel the skin off the stems.
  4. Cut the stems into half-inch cubes.
  5. Cut the heads into similar-sized pieces.
  6. Fill a large pot with water and add a handful of salt.
  7. Half fill a large bowl with ice water.
  8. Once the water in the pot comes to a boil, add the broccoli.
  9. Boil the broccoli for a minute or two, but not longer.
  10. Take the broccoli out of the pot and place it into the ice water to stop the cooking.
  11. The reason this is done is to par-cook the broccoli so it is soft when the quiche is done cooking.

Broccoli Quiche Recipe

Quiche is a great way to get your family to eat their vegetables. It can either be served as a side dish along with your entrée or as the main dish. Vegetable quiche, like broccoli quiche, can be served with salad and your favorite potato dish.

Ingredients

  • 1 1/2 cups of broccoli
  • 1 cup of button mushrooms, sliced
  • 1 tablespoon of olive oil
  • 1 cup of cream or milk
  • 3 large eggs, beaten well
  • 2 tablespoons of butter, melted
  • 1 tablespoon of all-purpose flour
  • 1 teaspoon of salt
  • ½ teaspoon pepper
  • 1 cup of Gruyere or Swiss cheese, shredded

Instructions

  1. Heat the olive oil in a frying pan over a medium flame.
  2. Add the sliced mushrooms.
  3. Add a pinch of salt and pepper.
  4. Sautèe the mushrooms until soft, about five minutes.
  5. Remove from the heat and let cool.
  6. Preheat oven to 375 degrees.
  7. Bake piecrust for 10-15 minutes or until the crust is very lightly brown.
  8. While the crust is cooling, mix together the milk, eggs, butter, ¾ cup of cheese, flour, salt, and pepper.
  9. Mix until fully combined.
  10. Place the piecrust on a cookie sheet.
  11. Spread ¼ cup of shredded cheese over the bottom of the piecrust.
  12. Layer the sautéed mushrooms over the shredded cheese.
  13. Layer the broccoli over the sautéed mushrooms.
  14. Pour the egg mixture over the broccoli.
  15. Bake your quiche for 35 to 45 minutes or until a paring knife inserted into the center comes out clean.
  16. Let the quiche rest for about five minutes before cutting and serving.

In the 80s it was popular to say that real men did not eat quiche, but James Bond once made a quiche so I would suggest that real men do eat quiche. If it's good enough for 007, it's good enough for me.
