How to Make Greek Pasta Salad

Sure, it may look like this recipe has a lot of ingredients, but it comes together quickly, and it's worth the effort. 


For the salad

  • 1 (1-pound) package of orzo, cooked according to package instructions, drained, and cooled
  • 1 (8-ounce) package of feta cheese, crumbled
  • 2 cups of Kalamata olives, pitted and chopped
  • 1 (14-ounce) can garbanzo beans, drained
  • 1 cucumber, peeled and sliced
  • 1 small red onion, diced
  • 1 small green bell pepper, seeded and diced
  • 1 small red pepper, seeded and diced
  • 2 large tomatoes, diced
  • 1 cup of cherry tomatoes, halved
  • Salt and pepper to taste

For the dressing

  • ¼ cup of extra virgin olive oil
  • ¼ cup of red wine vinegar
  • 3 tablespoons of lemon juice
  • 1 tablespoon of dried oregano
  • 4 cloves of garlic minced
  • Salt and pepper to taste


For the salad

  1. In a large bowl, mix the orzo, feta cheese, olives, garbanzo beans, cucumber, onion, peppers, diced tomatoes, and cherry tomatoes.
  2. Set in your refrigerator while you mix the dressing.

For the dressing

  1. In a small bowl, mix together the red wine vinegar, lemon juice, garlic, and oregano.
  2. Slowly drizzle in the olive oil while whisking the mixture.
  3. Taste for salt and pepper.
  4. Mix the dressing with the prepared salad.
  5. Chill for one hour.
