Broccoli Turkey Casserole

This creamy, cheesy casserole totally transforms leftover turkey into a deeply satisfying meal that serves 6.

Ingredients

  • 2 tablespoons of olive oil
  • 1½ cup of celery, chopped
  • ⅔ cup of green bell pepper, chopped
  • ⅓ cup of onion, chopped
  • 1 can (10½ ounces) of cream of chicken soup
  • ⅔ cup of milk
  • ½ cup of sour cream
  • ⅔ cup of cheddar cheese, grated
  • ⅔ cup of mozzarella, grated
  • ⅔ cup of Gouda, grated
  • 1 cup grated cheese of your choice
  • 1 package (8 ounces) of elbow noodles, cooked according to package directions and drained
  • 1 package (4 ounces) of frozen broccoli, thawed and drained
  • 2½ cups of cooked turkey, chopped
  • ½ teaspoon of salt
  • ¼ teaspoon of pepper
  • ¼ teaspoon of nutmeg
  • 1 cup cheese of (cheddar, mozzarella, or gouda) for topping

Directions

  1. Preheat your oven to 350°F. Grease a 9x13-inch baking dish
  2. Heat olive oil in a large skillet.
  3. Saute peppers, celery, and onion until tender, 3-5 minutes.
  4. Add the chicken soup, milk, sour cream, cheddar cheese, mozzarella, and gouda.
  5. Heat the mixture on low, stirring, until the cheeses have melted.
  6. Mix together the cheese sauce, cooked noodles, broccoli, turkey, and seasonings.
  7. Pour everything into the prepared dish.
  8. Top with a cup of grated cheese of your choice.
  9. Bake for 40-45 minutes or until golden brown.

Cheesy Turkey Pot Pie

This pie-style casserole is hearty and warming — perfect for a late fall supper after Thanksgiving. It serves 6.

Ingredients

  • 1 cup of shredded cheddar cheese
  • 3 cups of cooked, chopped turkey
  • 1½ cups of sliced celery
  • 1 cup frozen mixed vegetables
  • 1 tablespoon of lemon juice
  • ½ teaspoon of poultry seasoning
  • 1 cup condensed cream of mushroom soup
  • ½ teaspoon of salt
  • 1 teaspoon of pepper
  • 1 double pastry for one 9-inch pie

Directions

  1. Preheat your oven to 400°F.
  2. In a bowl, combine ¾ cup of the cheese, mixed veggies, turkey, celery, lemon juice, poultry seasoning, cream of mushroom soup, salt, and pepper. Mix well.
  3. Roll the pastry into two 15-inch rounds.
  4. Fit one piece of pastry into a deep dish pie dish; trim to 1 inch beyond the edge.
  5. Fill with the turkey mixture and top with the second pastry round. Flute the two pasteries together.
  6. Top with remaining cheese.
  7. Bake for 30 to 35 minutes.
  8. Garnish with fresh parsley.

Creamy Turkey & Rice Casserole

For this casserole, you can also use up leftover stuffing (or, if you ate it all, you can use croutons). It serves 6.

Ingredients

  • 1 can (10¾ ounces) condensed cream of celery soup
  • 1 can (10¾ ounces) condensed cream of mushroom soup
  • 1 can (10¾ ounces) condensed cream of onion soup
  • 5 ounces of processed cheese food (Velveeta), cubed
  • ⅓ cup of mayonnaise
  • 4 cups of cubed cooked turkey
  • 1 package (16 ounces) of frozen broccoli cuts, thawed
  • 1½ cups of cooked white rice
  • 1½ cups of cooked wild rice
  • 1 can (8 ounces) of sliced water chestnuts, drained
  • 1 jar (4 ounces) of sliced mushrooms, drained
  • 1½ cups leftover stuffing or salad croutons

Directions

  1. Preheat the oven to 350°F. Grease a 9x13-inch baking dish
  2. In a large bowl, combine the undiluted soups, cheese, and mayonnaise.
  3. Stir in the turkey, broccoli, rice, water chestnuts, and mushrooms.
  4. Place the mixture into the greased dish.
  5. Bake, uncovered, for 30 minutes.
  6. Remove from oven and stir.
  7. Sprinkle the top with stuffing or croutons.
  8. Bake 8-12 minutes longer or until bubbly.
