There's something about Philly cheesesteak that instantly makes our mouths water. Maybe it's the melted cheese or the thinly sliced succulent beef with caramelized onions. We love eating this straight off the grill and loading it with some of our favorite veggies. I mean, how can we not? If you love a good Philly Cheesesteak, we have a juicy recipe just for you.

How to Make a Philly Cheesesteak

Melty cheese, tender beef, sweet onions — this recipe has all the stuff you love in your Philly cheesesteak. It makes 2 servings.

  • 4 tablespoons oil, divided
  • 1 onion, thinly sliced
  • ½ teaspoon salt
  • 1 green pepper, seeds, stem and ribs removed and thinly sliced
  • ½ pound thinly sliced deli roast beef, cut into strips
  • 3 garlic cloves, minced
  • 4 thin slices Provolone cheese (or your favorite cheese)
  • 2 hoagie-style rolls, ciabatta, or baguette, toasted

  1. In a large sauté pan, heat 2 tablespoons of the oil over medium-low heat until hot.
  2. Add the onions and salt. Cook, stirring occasionally, until the onions are caramelized. This takes about 20 minutes.
  3. Remove the onions from the pan and set aside.
  4. Turn the heat to medium-high. Add the remaining 2 tablespoons of oil and the green peppers and cook, stirring occasionally until the peppers are soft.
  5. Add the roast beef to the pan and cook until it warms up.
  6. Add the garlic and cook, stirring constantly, until the garlic is fragrant — about 30 seconds.
  7. Return the onions to the pan and cook, stirring constantly, until everything is heated through.
  8. Split the onions, peppers, and meat into two piles and top each with slices of Provolone cheese. Allow to rest on the griddle until the cheese melts.
  9. Spoon the filling into the rolls.
Quick Tip

Want your cheese to melt quickly? Turn the griddle off and cover each pile with a potlid or heat-safe bowl. The lid will trap the heat and help the cheese melt more quickly.

Filling Options

The best thing about this Philly cheesesteak recipe is that you can make it however you like. While we're fans of the classic, sometimes we love a fully loaded veggie Philly cheesesteak. Here are some filling suggestions:

  • Lettuce
  • Red bell peppers
  • Mushrooms
  • Spinach
  • Jalapeños
  • Pickles
  • Tomatoes
  • Pepperoni

Swap provolone cheese for other cheeses such as feta, brie, pepper jack, or cheddar. Top it with your favorite condiments like mayo, ranch, garlic aioli, or honey mustard.
