Fast & Easy Shrimp Fried Rice Recipe Using Leftover Rice

When we make rice, we always make sure we cook extra so we can have some left over. Why? So we can make one of our favorite fast dishes — shrimp fried rice. With our easy recipe, you can turn your leftover rice into something delicious faster than it will take to have it delivered.

Shrimp Fried Rice Recipe 

When you make a batch of rice, you can store the leftovers in one-cup servings in the freezer for up to six months. When you're ready to whip up a batch of fried rice, pull a few packages out of the freezer, thaw it, and get cooking. This recipe makes 4-6 servings. 


  • 4 tablespoons oil
  • 1 bunch green onions, thinly sliced
  • 1 tablespoon grated ginger root
  • 1 carrot, peeled and diced
  • 1 cup fresh or frozen peas
  • 3 cups cooked rice
  • 2 cups cooked shrimp with tails removed
  • 2 garlic cloves, minced
  • 2 eggs, beaten
  • ¼ cup soy sauce
  • ¼ teaspoon of sesame oil


  1. In a large wok or skillet, heat the oil on medium-high until it shimmers.
  2. Add the onions, ginger, carrots, and peas. Cook, stirring, until the vegetables are tender, 3-5 minutes.
  3. Add the shrimp and cook, stirring, until heats through, about 2 minutes more.
  4. Add the garlic and cook, stirring, for 30 seconds.
  5. Add the eggs, soy sauce, and sesame oil. Cook, stirring, until the egg is cooked, 2-3 minutes more.
Helpful Hack

You can also buy precooked rice in the rice aisle at the grocery store (we love that we have this option!) or use cauliflower rice. Any rice type will work. We like jasmine rice or brown rice.
