  • 1/2 teaspoon chili powder
  • Salt and pepper to taste
  • 1 cup black beans
  • 2 teaspoons minced seeded jalapeno chilis
  • 1/2 cup diced tomatoes
  • 3/4 cup cooked brown rice
  • 1 small avocado, diced
  • 1/2 cup shredded vegan cheese

Instructions

  1. Sauté onions in oil in a large skillet over medium-high heat, until onions begin to brown (about five to seven minutes).
  2. Add seasonings and zucchini, and continue cooking until veggies are tender (about five additional minutes).
  3. Add in chilies, black beans, and rice and simmer until heated through.
  4. Wrap tortillas in foil and heat in the oven at 350 degree F for about five minutes.
  5. Wrap veggie mixture with vegan cheese, avocado, and diced tomatoes.
  6. Serve with fresh cilantro.

Optional Variations

  • Replace black beans with pinto or navy beans
  • Use bell peppers in place of zucchini.

  • 1 cup cooked store-bought or homemade vegan sausage

  1. Saute tofu over medium heat with olive oil, garlic, salt, and onion (about five minutes) until onions are soft.
  2. Add peppers and seasonings and continue cooking for an additional seven to ten minutes (until mixture is no longer watery).
  3. Add vegan sausage to the mix and stir well.
  4. Wrap up mixture in warmed tortillas (with avocado, if desired) and enjoy!
